No-Bake Peanut Butter Pie
This No-Bake Peanut Butter Pie is a dream for all the peanut butter lovers in the world! A rich and creamy peanut butter filling piled high into a no-bake oreo crust, and then smothered with chocolate drizzle and resee’s peanut butter cups. OH YEAH.

Being married to someone who doesn’t like sweets is a struggle. Not because I’m upset that I get that person’s share of said sweets, but because I can’t ever really bounce ideas off of this person. Let’s say, for kicks, his name is Dave. And he’s my husband. Just for the sake of the story.  I could hand Dave a cookie or a flaming dish of crème brulee, and he would have the same reaction both times – “It’s good. Yeah. I don’t want any more though – I’m stuffed.” #EYEROLL.

ANYWAY this is why I need to call in reserves when trying to decide if a sweet is blog worthy. I saw this recipe for Peanut Butter pie on NY Times Food and I thought hot damn, that sounds good. I simplified it by making an Oreo crust and then trashed it up with some Reese’s Cups. We brought it over to our neighbors Mike and Christine for a dinner get together. Before Mike and Christine showed up on our doorstep with Christmas cookies 3 months after we moved into our house, Dave and I thought we were the youngest people in our neighborhood. Then Mike and Christine showed up and we found that they were 1) our age 2) loved dogs and 3) enjoy eating and drinking just as much as we do! IT WAS A NEIGHBOR MIRACLE! So I brought this pie over thinking they could be my guinea pigs. Dave took 3 bites and said “Yeah. It’s good. I don’t want any more though – I’m stuffed” {EYE ROLL}. Mike and Christine though seemed to be a little more enthused about it. They even offered to save the rest for a family gathering later that weekend. And then I got the text from Christine the next day saying that not only did they not share the rest with their family, they ate the whole rest of the damn pie themselves.

Total neighbor soulmates.

So I think you’re gonna like it. It’s no back for those hot summer months, but I highly advise keeping it in the fridge until your’e just ready to unleash it on your guests. It’s creamy, dreamy, and NOT STEAMY (Get it? Cuz’ it’s no-bake? Ok bye).

No-Bake Peanut Butter Pie

For the crust
  1. 25 Oreos
  2. 5 tablespoons of butter, melted
For the filling
  1. 1 & ¼ cups heavy cream
  2. 1 & ½ cups smooth, sweetened peanut butter
  3. 1 8-ounce block full-fat cream cheese, at room temperature
  4. ⅔ cup light brown sugar
  5. 1 teaspoon pure vanilla extract
  6. ½ teaspoon kosher salt
  7. 16 full size Resee's Cups,chopped up
For the drizzle
  1. 4oz dark or milk chocolate, melted
Instructions
  1. In a food processor, pulse the Oreos til they're crumbs, then add the melted butter and stir. Push mixture into and up the sides of an 8 or 9" pie plate to form the crust. Let crust set in the fridge for 30 minutes.
Make the filling
  1. In a large bowl, whip the cream to stiff peaks using an electric mixer at medium-high speed. Set aside.
  2. In another large bowl, beat the peanut butter, cream cheese, brown sugar, vanilla and salt on medium speed until fluffy, about 2 minutes. Use a large rubber spatula to gently fold the whipped cream into the peanut butter mixture. Transfer the mixture to the pie crust.
  3. Melt your chocolate in the microwave in 15 second increments until fully melted.
  4. Top the pie with crushed Resee's and then drizzle with the chocolate.
  5. Chill uncovered for at least 4 to 6 hours, until filling is set. Keep chilled until ready to serve.
