These Buffalo Chicken Stuffed Peppers were one of my very first recipes when I started And They Cooked Happily Ever After back in 2012. Back when I just decided that I was gonna cook stuff, take AWFUL pictures of it, and throw it up on the internet, because that’s what blogging is right? Sometimes I go back to my earlier recipes and think “man, that was so tasty, but these pics are so awful, no one would ever want to eat it!”.
And in the spirit of blog makeovers (like this one just had!) I thought I should throw it back to one of my earliest recipes – that is dynamite – but the pics of it that I took back in the day? Naaasooomuch.

I think it’s important in life to all look back sometimes and be proud of ourselves for making progress – whatever it may be. In your job, on a house project, or something as small as getting out of bed a little earlier every day. And while I have a whole ton to learn about all things blogging, photography included, I get a nice little feeling when I look back at my god-awful photo journalism and see how far I have come.

Ok now enough sap. Let’s get to these Buffalo Chicken Stuffed Peppers! Changed slightly from my original recipe, but these are just so good – if you’re a buffalo chicken fan or not. It gives a fresh new spin on a classic stuffed pepper, which is a perfect quick and easy weeknight dinner! These also freeze like a dream if you’re a “plan ahead’er” like I am. There’s no greater joy in your weeknight life than knowing that when you get home from work, you’ve got something tasty waiting for you in the freezer, and all you have to do is pop it in the oven (or micro) for a bit and dinner is served. I’ve made these with both regular chicken breast and ground chicken, and both are spectacular.
