BLT Pasta Salad

There’s nothing that says summer quite like a BLT – salty bacon, lettuce and tomatoes fresh from the garden, slapped on top of some crusty bread with (or without) a shmeeeeeeeeeeear of mayo.  AND what is one of the most classic summer sides present at every summer BBQ? PASTA SALAD!

So I introduced these two – let them get to know each other – one thing lead to another and this BLT Pasta Salad was born. Isn’t summer love grand?

Guys do it. Labor Day weekend = last ‘official’ days of summer.  So BLT Pasta Salad yourself.

One of the best flavor combos to ever hit summer - bacon, lettuce and tomato - mixed with one of the best summer sides - pasta salad. Enjoy their baby 🙂

Ingredients
  1. 1 lb. (whole box) Cavitappi (or pasta of your choice - elbows and penne work well for pasta salads)
  2. 1 lb bacon, cooked and chopped, reserving 2-3 tablespoons for sprinkling on the top before serving
  3. 4 scallions, chopped (green and white parts), reserving 2-3 tablespoons for sprinkling on the top before serving
  4. 2 cups lettuce, chopped* (I used a spring mix I had - romaine, or any other hearty lettuce would work) reserving 2-3 tablespoons for sprinkling on the top before serving
  5. 2 pints cherry tomatoes, sliced in half, reserving 2-3 tablespoons for sprinkling on the top before serving
  6. 1.5 cups miracle whip
  7. 1.5 teaspoons garlic powder
  8. 1.5 teaspoons kosher salt
  9. 3/4 teaspoon ground black pepper
Instructions
  1. Bring a large pot of salted water to a boil and cook your Cavitappi. Set aside once cooked.
  2. Cook your bacon (either in a skillet or in the oven) until crisp. Chop bacon and set aside.
  3. Chop your scallions & lettuce and slice your cherry tomatoes in half and set aside.
  4. In a small mixing bowl, mix together your miracle whip, garlic powder, salt and pepper. Once your pasta has cooled, pour your miracle whip mixture over the pasta and combine to fully coat the pasta. Add your chopped bacon, scallions, lettuce and tomatoes and gently fold into the pasta. Sprinkle your reserved bacon, scallions, lettuce and tomatoes on the top and serve.
Notes
  1. I like to reserve some of the bacon, scallions, lettuce and tomato for sprinkling on the top at the end just because I think it looks pretty! And really lets the ingredients shine without being covered with the dressing.
  2. I would highly recommend serving this immediately or soon after putting together as visually it looks best when freshly assembled. You can always prep all your ingredients the night before and then assemble the salad right before serving.
