Homemade Oreo Cookie Ice Cream Sandwiches

Back in high school, my gal pals and I worked hard to earn our pennies.  And the reason we worked so hard to earn these said pennies was so we could go to TGIFridays (the red and white striped shirt with flare covered suspenders era) every weekend to do our part for the economy.

Chicken fingers with honey mustard dipping sauce, the grilled chicken wrap with “just the chicken….and the wrap”, and for dessert, Oreo Madness.  My favorite cookie in the world in ice cream form- topped with hot fudge and caramel.

These are adapted from the Homemade Oreo Cookie recipe from a while back – and by adapted I mean creamy vanilla ice cream sandwiched between BIGGER homemade cookies, and finished off with a caramel bath (and if you’re smart, hot fudge too – I just didn’t have any on hand – damn squared).


Homemade Oreo Cookie Ice Cream Sandwiches

Homemade Oreo Cookie Ice Cream Sandwiches

Yield: 8 Ice Cream Sandwiches

Ice cream sandwiches made with homemade oreo cookies

Ingredients

    For the Cookie
  • 1 cup (2 sticks) unsalted butter, melted
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips, melted
  • 1 egg
  • 1 & 1/2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • For the Sandwich
  • vanilla ice cream
  • caramel topping (and hot fudge if you like!)

Instructions

1) In a medium bowl, whisk the butter and the sugar until combined. Whisk in the vanilla and melted chocolate. Add the egg and stir until well blended.

2) In another bowl, combine flour, cocoa powder, baking soda, and salt. Stir to blend them. Using a wooden spoon, stir the flour mixture into the chocolate mixture. The finished dough should feel like Play-Doh. Cover the dough with plastic, and chill for 1 hour.

3) Place the dough on a long sheet of wax or parchment paper. Use your hands to shape it into a rough log, about 10 inches long and 2 & 1/2 inches in diameter. Place the log at the wide edge of the paper and roll it around the log. With your hands on the paper, roll the dough into a tighter log, keeping the diameter the same.

4) Refrigerate the log for at least 2 hours - after 2 hours it should be firm enough to slice without crumbling.

5) Set the oven at 325 degrees. Line 2 baking sheets with parchment paper or spray with non-stick cooking spray.

6) Remove the dough from the paper. Cut the log into 16 slices, each about 1/2" thick. Set them on the baking sheets 1 inch apart.

7) Bake the cookies for 20 to 25 minutes, checking them often after 15 minutes, or until they are firm when touched in the center. Let them cool completely on the sheets.

8) While the cookies are cooling, you can take your vanilla ice cream out of the freezer. Leave it out for about 5-10 minutes to allow it to thaw a bit. The oreo cookies are pretty delicate, so you want the ice cream to be soft when placing it on the cookies.

9) Take one of the oreo cookies -gently place about 1/2 cup of the vanilla ice cream on top of it (or more if you like!) - then take the other cookie and gently press it down on top of the ice cream so that the cookie doesn't crack. Repeat until all 8 ice cream sandwiches are formed.

10) Wrap each ice cream sandwich in wax paper and place in the freezer until ready to serve. When ready to serve, drizzle with caramel sauce and hot fudge. Serve gooey 🙂
